Simple zucchini curry or vegetable curry can be made with any kind of vegetables. It’s another healthy dish. I have it with flatbread or simple white rice for dinner or lunch. It is easy to make and nutritious because it is made with vegetables. Let’s make this easy vegetable side dish.

Step 1:

Add olive oil to a hot frying pan. Wait for a minute. Add onions first, then black seeds and garlic. Cook until the onions become brown. Add the chopped zucchini to the pan. Cook for 2-3 minutes.

Step 2:

Add all the spices one by one. Mix well and add 1/2 cup of water. Cook for 10-12 minutes on medium to low heat until the zucchini pieces become a bit tender. The vegetable is ready. I cook most vegetables in this way, like potatoes, butternut squash, squash, and so on.
