Basil Pesto Pasta with Veggies

Are you craving pasta? But no! You’re on a diet, right? No worries, we’ve got you, dear. This pasta recipe is enough to blow your mind, brain, and tummy. Vegetable pasta is undoubtedly very nutritious, but adding pesto to it is a game changer. Pesto itself is very nutrient-dense. Let’s make this yummy recipe.

Method:

Step 1:

First, boil the pasta with a pinch of salt and oil for 8 to 10 minutes. Meanwhile, we will make the pesto sauce.

Step 2:

For the pesto sauce, we add all the ingredients: garlic, nuts, salt, basil, oil, cheese, and optionally coriander leaves for extra flavor. Blend until the paste gets smoother.

Step 3:

When the pasta is done boiling, rinse it with cold water and let it cool. In a pan, take some olive oil and fry the onion until it gets brown. Then add the veggies to sauté. We added cherry tomatoes, coriander leaves, etc. Add all the spices along with soy sauce. Add the boiled pasta and cook for 5-6 minutes on medium to high flame. Then finally add the pesto sauce. Cook for another 10 minutes on medium to low flame. Turn off the stove, and here the yummiest nutrient plus energy-dense pasta is ready.
