Authentic Veggie Ratatouille Recipe

Ratatouille is a traditional vegetarian dish from the French province. It’s a kind of stew that includes a huge number of vegetables like eggplant, zucchini, peppers, tomatoes, etc. This recipe will help you meet your daily vegetable requirement. It also contains an adequate amount of dietary fibers, Vitamins A, D, K, potassium, and much more. Ratatouille may be a time-consuming dish to make, but if you want to have a fancy, healthy vegetarian dish, then definitely go for it. So, let’s make this recipe by following our easy steps.

Step 1:

First, let’s start with prepping the veggies by chopping the garlic, onion, red bell pepper, and yellow bell pepper. On the other side, boil two tomatoes, peel their skin, add salt and pepper, then blend to make a fine paste.

Step 2:

Add 2 tbsp of olive oil to the pan and add the chopped garlic and onion. Sauté for 2-3 minutes, then add the chopped bell peppers, add some salt and pepper, and sauté again for 5 minutes. Then add the tomato paste and cook for 2-3 minutes. When it cools, blend it again to make a sauce which is the base of this dish.

Step 3:

Cut the eggplants, zucchini, and tomatoes into fine thin slices. Take a dish pan and add the sauce we have just made, spreading it evenly. The next part needs your full attention as you have to arrange the cut veggies in a pan or bowl according to the picture we have shared here. After that, take a bowl and add some olive oil, thyme for the aroma, basil, salt, and pepper; mix it and put it on top of the veggies.

Step 4:

The final step is to bake the veggies. Cover the dish with tinfoil or aluminum foil. Bake at 350 degrees for 40-45 minutes covered, then remove the cover and bake again for 20 minutes. After all the effort, the famous ratatouille dish is ready to serve.
